Yum Oh! Baked S'mores

I was deciding what to bring to a small get together at my sister's house. It was our friend's birthday and my sister was already planning to bake her famous carrot cake so I really didn't need to bring another cake. But there's nothing wrong with a different kind of dessert, right? I was already going to bring a salad, so, naturally, it should be balanced out with a second dessert.

And when James saw this Baked Smores recipe, that was it. He declared that I would make Baked Smores.

So I did. And I didn't just make it in a regular 9 x 11 cake pan, I made it in a chafing dish! It was huge! Those are four giant Hershey's bars down there - and then some!

Mine didn't look as gorgeous and melty as the The Apron Gal's. But I bet it tasted the same. These were definitely better when served warm. I bet it would be best straight out of the oven. Mine came out of the oven before we even started dinner.

As yummy as it was, I don't think I'll make this recipe again, at least not in this form. Don't get me wrong, it was very good; we all really enjoyed it, but I think I had slightly different expectations. If you decide to use this original recipe, consider using regular size Hershey bars, the giant ones seemed like they were too thick for the rest of the Smore.

I've already started working out other ways to bake smores. I'll let you know when I figure out what I'm looking for.

Expecting

Sometimes we expect too much. Like when you eat an entire package of peanut butter chocolate chunk cookies and you expect that you will not gain a single ounce.

Or when you throw something in the trash and you expect that it will stay in the trash. But the next time you want to make coffee (decaf, of course) you see that the disposable coffee cup you threw away yesterday is miraculously clean and sitting among the coffee mugs waiting to be reused even though it's disposable.

I have this motto in our house: what goes in the trash, stays in the trash. Unfortunately, my mother never got the memo.

I've never heard the word expecting used so much in my life as it's being used now. Maybe it's because around ten or so of my friends are expecting new babies in 2012. Or maybe expecting is just the word du jour. Either way, we are expecting great things in 2012. 

I expect some major changes. And I trust that they will be according to God's will.

I expect a big surprise on this baby's birthday -  for purposes of the babies sex, the ultrasound proved unfruitful.

I expect to be thoroughly sleep deprived and covered in baby stink for most of the year.

I expect that my daughter will continue to crack jokes at every possible possible opportunity - which, in her world, is about every two minutes.

I expect that my son will continue to speak at uncontrollable, ear shattering volumes.

I expect that my husband will continue to refer to me in pronoun form as if he were narrating a book every time he recounts a story to me of something silly I did.

I expect that my mother will continue to give me directions every day and repeat each one at least five times.

I expect great things.

Take Back the Night Candlelight Vigil

A terrible thing happened in our tiny island community. A woman was murdered - a mother, sister, daughter, friend. I didn't know Emie, but I don't need to have known her to grieve for the loss of her life. Although I am sad and outraged, I haven't written about it yet; it's a sad excuse, but the truth is, I never respond to death well. Not that there is a right way to respond to death - but the way I respond tends to be more internal than anything.

Angelo's wife, who worked with Emie, is organizing a candlelight vigil and walk in remembrance of Emie (from his blog):

Take a stand against violence in our community. On Monday, February 13, 2012 from 8:00pm until 9:30pm, a candlelight vigil will be held in remembrance of Emie Romero.  Please RSVP on Facebook.
The vigil will take place on Palm Street next to Beach Road, near Godfather's Bar. Please gather in the street by 8:00 PM. At 8:30, a walk will be led around the Garapan Tourist District (clockwise from Godfather's to Winchell's, Fiesta, Hyatt, and back to Godfather's by 9:00 PM).
There will be a moment of silence at 9:00 PM, followed by prayer and song. Please wear white.
Candles will be available for a $5 donation. All proceeds will go to support Emie's two children in the Philippines. Donations will also be accepted at Godfather's Bar.

Kielbasa and Spinach with Garlic Potatoes

I've only recently started cooking again. This little baby in my belly has caused some pretty strong aversions, including an aversion to cooking. But, surprisingly, it has been taming my normal aversion to potatoes.

Kielbasa and spinach with garlic potatoes:

Kielbasa and Spinach
  • Kielbasa - try to brown the pieces first; no need to add oil to the pan. 
  • Onion
  • Spinach - add this last, make sure you don't over cook it
  • Black pepper

Garlic Potatoes
  • Butter and a little canola oil
  • Garlic
  • Potatoes
  • Salt
  • Black pepper
  • Rosemary
A real comfort meal.
